Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp Italian seasoning
  • 1 cup lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add chicken breasts and cook until no longer pink. Remove and shred the chicken.
  4. In the same pot, add chicken broth, heavy cream, and Italian seasoning. Bring to a simmer.
  5. Add broken lasagna noodles and cook until tender.
  6. Stir in the shredded chicken.
  7. In a bowl, mix ricotta cheese, mozzarella cheese, Parmesan cheese, and parsley.
  8. Ladle the soup into bowls and top with the cheese mixture.
