A comforting and creamy soup that combines the flavors of lasagna with tender chicken and rich cheese.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tbsp Italian seasoning
- 1 cup lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tbsp fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
- Add minced garlic and cook for another minute.
- Add chicken breasts and cook until no longer pink. Remove and shred the chicken.
- In the same pot, add chicken broth, heavy cream, and Italian seasoning. Bring to a simmer.
- Add broken lasagna noodles and cook until tender.
- Stir in the shredded chicken.
- In a bowl, mix ricotta cheese, mozzarella cheese, Parmesan cheese, and parsley.
- Ladle the soup into bowls and top with the cheese mixture.
