- 2 tsp baking powder

- 3 large eggs (room temperature)

- 1/2 cup unsalted butter (softened)
- 1/2 cup coconut cream
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray or butter.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, beat together the eggs, milk, melted butter, ube extract, and coconut cream until smooth.
- Gently pour the wet ingredients into the dry mixture. Stir until just combined—avoid overmixing for a tender cake.
- Pour the batter into the prepared baking dish and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve plain or with whipped cream.
