  • ½ cup crushed pineapple
  • ½ cup shredded coconut
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in the coconut milk and vanilla extract.
  5. Gently fold the dry ingredients with the wet ingredients.
  6. Stir in the crushed pineapple and shredded coconut.
  7. Pour the batter into a greased 9×13-inch cake pan and bake for 30-35 minutes.
  8. Let cool in the pan for about 10 minutes before transferring to a wire rack.
