- 1 cup coconut milk
- ½ cup unsalted butter, softened

- 1 tsp vanilla extract
- ½ cup crushed pineapple
- ½ cup shredded coconut
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream the butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in the coconut milk and vanilla extract.
- Gently fold the dry ingredients with the wet ingredients.
- Stir in the crushed pineapple and shredded coconut.
- Pour the batter into a greased 9×13-inch cake pan and bake for 30-35 minutes.
- Let cool in the pan for about 10 minutes before transferring to a wire rack.
