- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 teaspoons instant espresso powder, divided
- 2 tablespoons milk
- 8 ounces mascarpone cheese, chilled but slightly softened
- 1 cup powdered sugar
- 3 tablespoons heavy cream
- 1 tablespoon unsweetened cocoa powder, for dusting
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of the espresso powder.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Mix in the egg, vanilla extract, and milk.
- Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
- Scoop the dough into portions of about 1 1/2 tablespoons each and place them on the prepared baking sheet. Lightly flatten the tops.
- Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the topping, beat the mascarpone cheese, powdered sugar, heavy cream, and remaining 1 teaspoon espresso powder until smooth and creamy.
- Spread or spoon the mascarpone topping over the cooled cookies.
- Dust lightly with unsweetened cocoa powder and serve, or chill for 15 to 20 minutes for a firmer topping.
