A hearty and flavorful taco rice casserole that combines ground beef, beans, and cheese for a comforting meal.
Ingredients

- 1 pound ground beef
- ⅓ cup onion (chopped)
- 15.25 oz can whole kernel corn (drained)
- 15 oz can black beans (drained and rinsed)
- 14.5 oz can diced tomatoes (not drained)
- 4 oz can diced green chiles (drained)
- 1 cup minute rice
- 1 cup water
- 1 oz packet taco seasoning
- 8 oz cheddar cheese (shredded and divided)
- Cilantro and sour cream to top
Instructions
- Preheat the oven to 350 degrees. Grease a 9×13 baking dish.
- Dice the onion and chop the cilantro.
- Cook the ground beef with the onion in a large skillet over medium heat, breaking the meat apart as it cooks. Drain any grease.
- Add the corn, black beans, diced tomatoes, green chiles, rice, water, and taco seasoning. Stir well to combine, then fold in half the cheese.
- Pour the mixture into the casserole dish and spread it into an even layer. Top with the remaining cheese.
- Bake for 25 minutes, until rice is tender. Allow to set for 5 minutes.
- Sprinkle with cilantro, and serve with sour cream.
Notes
- Adjust spices to taste.
- Can substitute ground turkey for beef.
- Leftovers can be stored in the fridge for up to 3 days.
