Description

A hearty and flavorful taco rice casserole that combines ground beef, beans, and cheese for a comforting meal.


Ingredients

  • 1 pound ground beef
  • ⅓ cup onion (chopped)
  • 15.25 oz can whole kernel corn (drained)
  • 15 oz can black beans (drained and rinsed)
  • 14.5 oz can diced tomatoes (not drained)
  • 4 oz can diced green chiles (drained)
  • 1 cup minute rice
  • 1 cup water
  • 1 oz packet taco seasoning
  • 8 oz cheddar cheese (shredded and divided)
  • Cilantro and sour cream to top

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9×13 baking dish.
  2. Dice the onion and chop the cilantro.
  3. Cook the ground beef with the onion in a large skillet over medium heat, breaking the meat apart as it cooks. Drain any grease.
  4. Add the corn, black beans, diced tomatoes, green chiles, rice, water, and taco seasoning. Stir well to combine, then fold in half the cheese.
  5. Pour the mixture into the casserole dish and spread it into an even layer. Top with the remaining cheese.
  6. Bake for 25 minutes, until rice is tender. Allow to set for 5 minutes.
  7. Sprinkle with cilantro, and serve with sour cream.

Notes

  • Adjust spices to taste.
  • Can substitute ground turkey for beef.
  • Leftovers can be stored in the fridge for up to 3 days.
