A healthier fall treat that captures the essence of traditional apple fritters in a moist cake with spiced apple pockets.

- 1 cup White Sugar (no substitutions suggested)
- 1 tablespoon Cornstarch (can be replaced with tapioca starch)

- 1/2 cup Dark Brown Sugar (light brown sugar can be substituted)
- 1/2 cup Unsalted Butter (ensure it’s at room temperature)
- 1 cup Greek Yogurt (sour cream can be used as a substitute)
- 2 cups All-Purpose Flour (can be substituted with a gluten-free blend)
- 1 tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Kosher Salt (regular salt can be used)
- 3 large Eggs (room temperature for proper mixing)
- 1 cup Powdered Sugar
- 2 tablespoons Milk (add more for a thinner consistency)
- 1 teaspoon Vanilla Extract (use pure vanilla for best results)
Instructions
- Make the Apple Filling by cooking diced Granny Smith apples, white sugar, cornstarch, ground cinnamon, and a splash of water over medium heat until soft and thickened, approximately 5-7 minutes. Let it cool.
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan with unsalted butter.
- Cream room-temperature butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add applesauce, vanilla extract, and room-temperature eggs to the butter mixture, mixing until smooth.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon in another bowl. Gradually add this to the wet mixture, alternating with Greek yogurt.
- Pour half of the batter in the prepared pan, spread the cooled apple mixture evenly, sprinkle with half of the cinnamon sugar, then top with remaining batter and cinnamon sugar.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Prepare the glaze by whisking together powdered sugar, milk, and vanilla until smooth.
- Poke holes in the warm cake with a toothpick and pour the glaze over. Let it cool slightly before serving.
