  • 1 cup Greek Yogurt (sour cream can be used as a substitute)
  • 2 cups All-Purpose Flour (can be substituted with a gluten-free blend)
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt (regular salt can be used)
  • 3 large Eggs (room temperature for proper mixing)
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk (add more for a thinner consistency)
  • 1 teaspoon Vanilla Extract (use pure vanilla for best results)

Instructions

  1. Make the Apple Filling by cooking diced Granny Smith apples, white sugar, cornstarch, ground cinnamon, and a splash of water over medium heat until soft and thickened, approximately 5-7 minutes. Let it cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan with unsalted butter.
  3. Cream room-temperature butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add applesauce, vanilla extract, and room-temperature eggs to the butter mixture, mixing until smooth.
  5. Whisk together flour, baking powder, baking soda, salt, and cinnamon in another bowl. Gradually add this to the wet mixture, alternating with Greek yogurt.
  6. Pour half of the batter in the prepared pan, spread the cooled apple mixture evenly, sprinkle with half of the cinnamon sugar, then top with remaining batter and cinnamon sugar.
  7. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  8. Prepare the glaze by whisking together powdered sugar, milk, and vanilla until smooth.
  9. Poke holes in the warm cake with a toothpick and pour the glaze over. Let it cool slightly before serving.
