- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons freeze-dried strawberry powder
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, matcha powder, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Beat in the egg and vanilla extract until combined.
- Add the dry ingredients and mix just until a soft dough forms.
- In a separate bowl, beat the cream cheese, powdered sugar, and freeze-dried strawberry powder until smooth and creamy.
- Scoop the dough into 12 even portions and roll into balls.
- Place the dough balls on the prepared baking sheet and press a gentle indent into the center of each one.
- Spoon about 1 teaspoon of strawberry filling into each indent.
- Bake for 10 to 12 minutes, until the edges are lightly set and the tops look dry but still soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
