  • ½ cup vegetable oil (any neutral oil, or melted butter)
  • 2 large eggs (at room temperature)
  • 1 ½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • 1 cup powdered sugar
  • 23 tablespoons strawberries (mashed or strawberry puree)
  • ½ teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F. Line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mash bananas until smooth. Whisk in sugar, brown sugar, oil, eggs, and vanilla until combined.
  3. In a separate bowl, mix flour, baking soda, baking powder, and salt.
  4. Add dry ingredients to wet ingredients and gently mix until just combined. Fold in diced strawberries (don’t overmix).
  5. Pour batter into the prepared pan. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
