Description
Spinach Lasagna Roll Ups are creamy, cheesy, saucy, and comforting. They are easier to serve than traditional lasagna and perfect for a meatless family dinner.

- 10–12 lasagna noodles (regular, not oven-ready or lasagna sheets)
- 15 oz ricotta cheese
- 1 cup mozzarella cheese (shredded)
- ½ cup Parmesan cheese (grated or grated Romano)
- 1 large egg (lightly beaten)
- 1 cup frozen spinach (thawed & squeezed dry or cooked fresh spinach)
- 2 cloves garlic (minced)
- ½ teaspoon table salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2–3 cups marinara sauce
- 1 cup mozzarella cheese (shredded for topping)
- ¼ cup parmesan cheese (grated or grated Romano)
Instructions
- Cook the lasagna noodles per package instructions. Drain and lay flat on parchment or a cooking sheet lightly sprayed with cooking spray to prevent sticking.
- Preheat the oven to 375 degrees F.
- Spread a thin layer of marinara sauce on the bottom of your baking dish.
- Grate the Parmesan cheese and shred the mozzarella cheese.
- Thaw the frozen spinach completely, then squeeze out excess moisture with a clean kitchen towel.
- Add the ricotta, mozzarella, parmesan, egg, spinach, garlic, salt, pepper, and Italian seasoning to a large bowl.
- Stir until creamy and well combined.
- Lay out a noodle and spread 2-3 tablespoons of the filling evenly. Roll it up gently.
- Place it seam-side down in the prepared baking dish. Repeat with the remaining noodles.
- Spoon the remaining marinara over the roll-ups.
- Sprinkle the shredded mozzarella and grated parmesan evenly over the top.
- Cover with foil and bake at 375°F for 25 minutes.
- Remove the foil and bake for another 10-15 minutes until bubbly and golden.
- Let the lasagna roll-ups cool for 5-7 minutes before serving. This will help them set up.
Notes
- Use fresh spinach for better flavor if available.
- Adjust the seasoning to your taste.
- Store leftovers in an airtight container in the refrigerator.
