Description

Spinach Lasagna Roll Ups are creamy, cheesy, saucy, and comforting. They are easier to serve than traditional lasagna and perfect for a meatless family dinner.


Ingredients

  • 1012 lasagna noodles (regular, not oven-ready or lasagna sheets)
  • 15 oz ricotta cheese
  • 1 cup mozzarella cheese (shredded)
  • ½ cup Parmesan cheese (grated or grated Romano)
  • 1 large egg (lightly beaten)
  • 1 cup frozen spinach (thawed & squeezed dry or cooked fresh spinach)
  • 2 cloves garlic (minced)
  • ½ teaspoon table salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 23 cups marinara sauce
  • 1 cup mozzarella cheese (shredded for topping)
  • ¼ cup parmesan cheese (grated or grated Romano)

Instructions

  1. Cook the lasagna noodles per package instructions. Drain and lay flat on parchment or a cooking sheet lightly sprayed with cooking spray to prevent sticking.
  2. Preheat the oven to 375 degrees F.
  3. Spread a thin layer of marinara sauce on the bottom of your baking dish.
  4. Grate the Parmesan cheese and shred the mozzarella cheese.
  5. Thaw the frozen spinach completely, then squeeze out excess moisture with a clean kitchen towel.
  6. Add the ricotta, mozzarella, parmesan, egg, spinach, garlic, salt, pepper, and Italian seasoning to a large bowl.
  7. Stir until creamy and well combined.
  8. Lay out a noodle and spread 2-3 tablespoons of the filling evenly. Roll it up gently.
  9. Place it seam-side down in the prepared baking dish. Repeat with the remaining noodles.
  10. Spoon the remaining marinara over the roll-ups.
  11. Sprinkle the shredded mozzarella and grated parmesan evenly over the top.
  12. Cover with foil and bake at 375°F for 25 minutes.
  13. Remove the foil and bake for another 10-15 minutes until bubbly and golden.
  14. Let the lasagna roll-ups cool for 5-7 minutes before serving. This will help them set up.
