Instructions
- Heat oil in a frying pan over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in garlic and ginger, cooking for another minute.
- Add chopped tomatoes and spices, cooking until tomatoes soften.
- Crack the eggs into the pan, cover, and cook until the eggs are set.
- Garnish with cilantro before serving.
