- 6 slices Bacon
- 1 pound Chicken (breast or thighs)
- 1 medium Yellow Onion
- 3 cloves Garlic
- 2 medium Fresh Jalapeños
- 8 ounces Cream Cheese
- 1 cup Cheddar Cheese
- 1 cup Heavy Cream or Half-and-Half
- 4 cups Chicken Broth
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Smoked Paprika
- 1 teaspoon Cumin
- Garnishes (Sour cream, cilantro, green onions, and sliced jalapeños)
Instructions
- Cook the chopped bacon in a large Dutch oven over medium heat until crispy, about 5-7 minutes. Set aside, leaving the fat in the pot.
- Sauté diced yellow onion in the bacon fat for about 3-4 minutes until translucent, then add minced garlic and finely chopped fresh jalapeños, cooking for another 2 minutes.
- Season raw chicken with salt and pepper, sear for 4-5 minutes on each side until golden brown. Skip if using pre-cooked chicken.
- Pour chicken broth to deglaze, scraping any bits off the bottom. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Remove chicken, shred with two forks, and return to the pot.
- Add softened cream cheese, stirring until melted into the broth.
- Mix in shredded cheddar cheese, letting it melt. Then stir in cream, simmering briefly.
- Taste and adjust seasoning with salt and pepper. Stir in reserved bacon and garnish before serving.
