  2. If using fresh peaches, peel and chop them into small pieces. If using frozen or canned, ensure they are well-drained and chopped.
  3. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  4. In another bowl, beat 2 large eggs, then add 1 cup of granulated sugar and ½ cup of vegetable oil. Mix until smooth.
  5. Gradually add the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix!
  6. Fold in the chopped peaches gently to distribute them throughout the batter.
