- 1 teaspoon baking powder

- 2 large eggs
- 1 cup granulated sugar
- ½ cup vegetable oil
- Fresh peaches (or frozen/canned, well-drained)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- If using fresh peaches, peel and chop them into small pieces. If using frozen or canned, ensure they are well-drained and chopped.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
- In another bowl, beat 2 large eggs, then add 1 cup of granulated sugar and ½ cup of vegetable oil. Mix until smooth.
- Gradually add the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix!
- Fold in the chopped peaches gently to distribute them throughout the batter.
- Pour the batter into your prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
