Description
These smashed gyros tacos combine seasoned ground beef pressed onto mini flatbreads, pan cooked until browned and crisp, then topped with a cool cucumber yogurt sauce, diced tomatoes, cucumber, red onion, and parsley for a fresh, satisfying dinner.

- 1 pound ground beef
- 8 mini flatbreads or small pitas
- 1 cup Greek yogurt
- 1 medium cucumber, half grated and half diced
- 2 medium tomatoes, diced
- 1 small red onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet or griddle over medium-high heat until hot.
- In a mixing bowl, combine the ground beef, 1 minced garlic clove, oregano, cumin, paprika, 1/2 teaspoon salt, and black pepper.
- In a small bowl, stir together the Greek yogurt, grated cucumber, lemon juice, the remaining garlic clove, and the remaining 1/2 teaspoon salt to make the sauce.
- Lightly brush the skillet with olive oil.
- Spread a thin layer of the seasoned beef onto one side of each flatbread, pressing it gently and evenly.
- Place the flatbreads meat-side down onto the hot skillet and cook for 4 to 5 minutes, until the meat is browned and cooked through.
- Flip and cook for 1 to 2 more minutes, until the bread is warm and lightly crisp.
- In a bowl, combine the diced tomato, diced cucumber, red onion, and parsley.
- Top each cooked taco with the yogurt sauce and the fresh vegetable mixture.
- Fold and serve immediately.
