- 2 boneless skinless chicken breasts
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes, 14.5 ounces
- 1 can tomato sauce, 8 ounces
- 1 can black beans, 15 ounces, drained and rinsed
- 1 cup corn kernels
- 4 cups chicken broth
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- 1 cup tortilla strips
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- 1/2 cup sour cream
Instructions
- Add the onion, garlic, red bell pepper, diced tomatoes, tomato sauce, black beans, corn, chicken broth, chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the slow cooker and stir well.
- Place the chicken breasts into the slow cooker, making sure they are mostly covered by the liquid.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is fully cooked and tender.
- Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Stir in the lime juice and chopped cilantro.
- Ladle into bowls and top with tortilla strips, shredded cheddar cheese, avocado, and sour cream before serving.
