  • 2 leaves dry bay leaves
  • 1 teaspoon kosher salt
  • 6 cups low-sodium chicken stock
  • 2 cups water
  • 1 cup dry ditalini pasta
  • 1/4 cup fresh chopped Italian parsley
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Pat the bone-in, skin-on chicken thighs dry and season generously with salt and pepper. Heat a splash of olive oil in a heavy-bottomed pot over medium-high heat, and carefully sear the chicken skin-side down for about 5-7 minutes, until it’s beautifully golden brown. Remove and set aside.
  2. Reduce the heat to medium and add diced yellow onion, celery, and carrots. Cook for 8-10 minutes, stirring occasionally, until the vegetables are softened. Next, add the yellow bell pepper and cook for an additional 3-4 minutes, then stir in minced garlic for about 1 minute until fragrant.
  3. Return the seared chicken to the pot, then pour in low-sodium chicken stock, water, diced tomatoes, and the bay leaves. Bring everything to a gentle simmer, cover the pot, and let it cook for at least 30 minutes, allowing the flavors to meld beautifully.
  4. Carefully remove the chicken from the pot, then add the cubed russet potatoes. Cover and let it cook for 15-20 minutes, until the potatoes are tender. Once cooled enough to handle, shred the chicken into bite-sized pieces.
  5. Return the shredded chicken to the pot, add dry ditalini pasta, and cook uncovered for about 8-10 minutes, or until the pasta is al dente. Taste and adjust seasoning with kosher salt and freshly ground black pepper. Stir in chopped Italian parsley just before serving for a fresh herbal touch.
