Hearty Sicilian Chicken Soup to Warm Your Soul This Winter

- 4 pieces bone-in, skin-on chicken thighs
- 1 medium yellow onion
- 2 stalks celery
- 2 medium carrots
- 1 medium yellow bell pepper
- 2 medium russet potatoes
- 4 cloves garlic
- 1 can diced tomatoes (no-salt-added)
- 2 leaves dry bay leaves
- 1 teaspoon kosher salt
- 6 cups low-sodium chicken stock
- 2 cups water
- 1 cup dry ditalini pasta
- 1/4 cup fresh chopped Italian parsley
- 1/2 teaspoon freshly ground black pepper
Instructions
- Pat the bone-in, skin-on chicken thighs dry and season generously with salt and pepper. Heat a splash of olive oil in a heavy-bottomed pot over medium-high heat, and carefully sear the chicken skin-side down for about 5-7 minutes, until it’s beautifully golden brown. Remove and set aside.
- Reduce the heat to medium and add diced yellow onion, celery, and carrots. Cook for 8-10 minutes, stirring occasionally, until the vegetables are softened. Next, add the yellow bell pepper and cook for an additional 3-4 minutes, then stir in minced garlic for about 1 minute until fragrant.
- Return the seared chicken to the pot, then pour in low-sodium chicken stock, water, diced tomatoes, and the bay leaves. Bring everything to a gentle simmer, cover the pot, and let it cook for at least 30 minutes, allowing the flavors to meld beautifully.
- Carefully remove the chicken from the pot, then add the cubed russet potatoes. Cover and let it cook for 15-20 minutes, until the potatoes are tender. Once cooled enough to handle, shred the chicken into bite-sized pieces.
- Return the shredded chicken to the pot, add dry ditalini pasta, and cook uncovered for about 8-10 minutes, or until the pasta is al dente. Taste and adjust seasoning with kosher salt and freshly ground black pepper. Stir in chopped Italian parsley just before serving for a fresh herbal touch.
