- 1 large spaghetti squash
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, chopped
- 1 1/2 cups tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F and line a baking sheet.
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Drizzle with olive oil, season with salt and pepper, and place cut side down on the baking sheet.
- Roast for 35 to 45 minutes until tender and easily shredded.
- Heat olive oil in a pan and sauté onion, garlic, and bell peppers until softened.
- Add ground meat and cook until browned, breaking it apart.
- Stir in tomato sauce, Italian seasoning, salt, and pepper, then simmer for 5 minutes.
- Scrape squash into strands and mix some with the filling.
- Spoon the mixture back into the squash shells.
- Top with mozzarella cheese and bake for 10 minutes until melted and bubbly.
