Description

  • 1 large spaghetti squash
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 1/2 cups tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F and line a baking sheet.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle with olive oil, season with salt and pepper, and place cut side down on the baking sheet.
  4. Roast for 35 to 45 minutes until tender and easily shredded.
  5. Heat olive oil in a pan and sauté onion, garlic, and bell peppers until softened.
  6. Add ground meat and cook until browned, breaking it apart.
  7. Stir in tomato sauce, Italian seasoning, salt, and pepper, then simmer for 5 minutes.
  8. Scrape squash into strands and mix some with the filling.
  9. Spoon the mixture back into the squash shells.
  10. Top with mozzarella cheese and bake for 10 minutes until melted and bubbly.
