  • 1 cup Cooked Rice
  • 1 cup Black Beans (Rinsed and drained)
  • 1 cup Corn (Frozen or canned)
  • 1 cup Salsa
  • 1 cup Shredded Cheese (Cheddar or Mexican blend)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine cooked rice, black beans, corn, salsa, and half of the cheese.
  4. Stuff the mixture into the bell peppers and place them in a baking dish.
  5. Top the stuffed peppers with the remaining cheese.
  6. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 5 minutes.
