Ingredients

- 4 pieces Bell Peppers (Any color)
- 1 cup Cooked Rice
- 1 cup Black Beans (Rinsed and drained)
- 1 cup Corn (Frozen or canned)
- 1 cup Salsa
- 1 cup Shredded Cheese (Cheddar or Mexican blend)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine cooked rice, black beans, corn, salsa, and half of the cheese.
- Stuff the mixture into the bell peppers and place them in a baking dish.
- Top the stuffed peppers with the remaining cheese.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 5 minutes.
