Description

Rhubarb Dream Bars are a classic dessert with a buttery shortbread crust and a creamy sweet-tart rhubarb custard filling. Perfect for Spring baking.


Ingredients

  • 4 Eggs
  • 2 cups Sugar
  • 1/2 cup Flour
  • 1 1/2 tsp Salt
  • 4 cups Chopped Rhubarb
  • 2 cups Flour
  • 3/4 cup Powdered Sugar
  • 1 cup Butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Chop rhubarb. Set aside.
  3. Mix shortbread crust ingredients together well: flour, powdered sugar, and butter. Press into greased 9 x 13 pan. Bake for 15 minutes and remove from the oven.
  4. While the crust is baking, beat together the filling ingredients: eggs, sugar, flour, and salt. Stir in rhubarb.
  5. Spoon the filling mixture onto crust. Bake for 45 minutes.
  6. Cool before cutting and serving.
  7. Optional: Make icing to drizzle over the cake by combining 1 cup powdered sugar, 1 tsp vanilla, and 1 tbsp milk.
