Description

Ingredients

  • 2 cups Rhubarb, Chopped
  • 1 1/2 cups Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Sugar
  • 1/2 cup Butter, Softened
  • 1 Egg
  • 1 tsp Vanilla
  • 1/2 cup Milk

Instructions

  1. Preheat oven to 350 degrees. Spray an 8 x 8 pan with non-stick spray and set aside.
  2. Cut enough rhubarb to equal 2 cups and set aside.
  3. Whisk flour, baking powder, and salt in a medium size bowl.
  4. In a separate bowl, cream together sugar and softened butter. Beat in egg and vanilla. Stir in milk.
  5. Slowly pour the flour mixture into the wet mixture and beat together just until combined. Fold in chopped rhubarb.
  6. Pour into prepared pan. Bake for 45-50 minutes.
  7. Meanwhile, make the sauce by cooking butter, heavy cream, sugar, and vanilla in a saucepan over medium heat, stirring constantly until the sugar is dissolved and the sauce is smooth and creamy.
