Description
Old-fashioned Rhubarb Cake with Butter Sauce made from simple ingredients. Soft, tender cake with tangy rhubarb and rich vanilla sauce.

- 2 cups Rhubarb, Chopped
- 1 1/2 cups Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Sugar
- 1/2 cup Butter, Softened
- 1 Egg
- 1 tsp Vanilla
- 1/2 cup Milk
Instructions
- Preheat oven to 350 degrees. Spray an 8 x 8 pan with non-stick spray and set aside.
- Cut enough rhubarb to equal 2 cups and set aside.
- Whisk flour, baking powder, and salt in a medium size bowl.
- In a separate bowl, cream together sugar and softened butter. Beat in egg and vanilla. Stir in milk.
- Slowly pour the flour mixture into the wet mixture and beat together just until combined. Fold in chopped rhubarb.
- Pour into prepared pan. Bake for 45-50 minutes.
- Meanwhile, make the sauce by cooking butter, heavy cream, sugar, and vanilla in a saucepan over medium heat, stirring constantly until the sugar is dissolved and the sauce is smooth and creamy.
