Description

A refreshing non-alcoholic beverage combining the crispness of cucumbers, the zest of ginger, and the coolness of mint, perfect for summer days.


Ingredients

  • 2 large English cucumbers, cut into chunks
  • 1 cup freshly squeezed lime juice (810 limes)
  • 2/3 cup granulated sugar
  • 1015 fresh mint leaves
  • 1 piece fresh ginger (12 inches), peeled and sliced
  • 4 cups water, divided

Instructions

  1. Wash cucumbers and cut into chunks. Place in a blender.
  2. Add mint leaves, ginger, and 2 cups of water to the blender. Blend until smooth.
  3. Strain the mixture through a fine mesh strainer into a pitcher.
  4. Add remaining 2 cups of water and lime juice to the pitcher. Stir in sugar until dissolved.
  5. Chill for at least 30 minutes. Serve over ice and garnish with mint or cucumber slices.
