Description
A refreshing non-alcoholic beverage combining the crispness of cucumbers, the zest of ginger, and the coolness of mint, perfect for summer days.
Ingredients

- 2 large English cucumbers, cut into chunks
- 1 cup freshly squeezed lime juice (8–10 limes)
- 2/3 cup granulated sugar
- 10–15 fresh mint leaves
- 1 piece fresh ginger (1–2 inches), peeled and sliced
- 4 cups water, divided
Instructions
- Wash cucumbers and cut into chunks. Place in a blender.
- Add mint leaves, ginger, and 2 cups of water to the blender. Blend until smooth.
- Strain the mixture through a fine mesh strainer into a pitcher.
- Add remaining 2 cups of water and lime juice to the pitcher. Stir in sugar until dissolved.
- Chill for at least 30 minutes. Serve over ice and garnish with mint or cucumber slices.
