Delicious Raspberry Tiramisu Recipe for a Sweet Delight

- 1 cup fresh raspberries
- 2 tablespoons sugar
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 cup strong non-alcoholic coffee or espresso
- Ladyfingers
- Cocoa powder or powdered sugar for dusting
Instructions
- In a bowl, mash 1 cup of fresh raspberries with 2 tablespoons of sugar until you have a chunky sauce. Set aside some whole raspberries for layering and garnish.
- In a separate bowl, combine 1 cup of mascarpone cheese with 1 cup of heavy cream and 1/2 cup of sugar. Using a hand mixer, whip until soft peaks form.
- Brew 1 cup of strong non-alcoholic coffee or espresso and let it cool slightly. You can add a splash of vanilla extract for extra flavor if desired.
- Dip each ladyfinger quickly into the cooled coffee, ensuring they don’t soak too long. Arrange a layer of dipped ladyfingers in the bottom of a rectangular or square dish.
- Spread half of the mashed raspberry mixture over the layer of ladyfingers, followed by half of the whipped cream mixture. Smooth it out gently with a spatula.
- Create a second layer using the remaining ladyfingers dipped in coffee, followed by the rest of the raspberry mixture and then the remaining whipped cream mixture.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This helps the flavors meld beautifully.
- Once chilled, top with remaining whole raspberries and a light dusting of cocoa powder or powdered sugar just before serving. Cut into squares and enjoy!
