  • 2 tablespoons sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 cup strong non-alcoholic coffee or espresso
  • Ladyfingers
  • Cocoa powder or powdered sugar for dusting

Instructions

  1. In a bowl, mash 1 cup of fresh raspberries with 2 tablespoons of sugar until you have a chunky sauce. Set aside some whole raspberries for layering and garnish.
  2. In a separate bowl, combine 1 cup of mascarpone cheese with 1 cup of heavy cream and 1/2 cup of sugar. Using a hand mixer, whip until soft peaks form.
  3. Brew 1 cup of strong non-alcoholic coffee or espresso and let it cool slightly. You can add a splash of vanilla extract for extra flavor if desired.
  4. Dip each ladyfinger quickly into the cooled coffee, ensuring they don’t soak too long. Arrange a layer of dipped ladyfingers in the bottom of a rectangular or square dish.
  5. Spread half of the mashed raspberry mixture over the layer of ladyfingers, followed by half of the whipped cream mixture. Smooth it out gently with a spatula.
  6. Create a second layer using the remaining ladyfingers dipped in coffee, followed by the rest of the raspberry mixture and then the remaining whipped cream mixture.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This helps the flavors meld beautifully.
  8. Once chilled, top with remaining whole raspberries and a light dusting of cocoa powder or powdered sugar just before serving. Cut into squares and enjoy!
