Ingredients

- 1 cup Quinoa (cooked and cooled)
- 1 cup Cherry tomatoes (halved)
- 1 cup Cucumber (diced)
- 1 cup Bell pepper (diced)
- 1/4 cup Red onion (finely chopped)
- 1/4 cup Olive oil
- 2 tablespoons Lemon juice (freshly squeezed)
- 1 teaspoon Honey (optional)
Instructions
- In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a separate bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for later.
