Description
Quick and easy pork fried rice recipe using leftovers.
Ingredients
Scale
- 1/2 cup Low sodium soy sauce
- 2 tbsp Sesame oil
- 1 tbsp chili paste (like sambal chili paste)
- pinch of kosher salt
- 4 cups Cooked and cooled basmati or jasmine rice
- 1 1/2 cups leftover cooked pork (cut into bite sized cubes)
- 1 cup mixed veggies (thinly sliced or bite sized)
- 1/2 Yellow onion (thinly sliced)
- 4 Large eggs
- 1 tbsp Vegetable oil (or coconut oil)
- 2 tbsp Sesame oil (for rice)
- 1 tbsp Sesame oil (for eggs)
Instructions
- In a small bowl stir together soy sauce, chili paste, sesame oil and a pinch of salt and set aside.
- In a medium pan over medium heat, add sesame oil and beaten eggs and cook until done. Roughly chop the eggs and set aside.
- Heat a large wok or sauté pan over medium-high heat.
- Add both oils.
- Once heated, add mixed veggies and onions. Sauté for 3-5 minutes until browned.
- Add leftover pork and cook for another minute.
- Add cooked rice and sauce. Toss well.
- Turn heat to low and toss for one minute.
- Remove from heat and plate.
