Description

Pink Birthday Cheesecake Slice is a no-bake party dessert with a buttery graham crust, a pink confetti cheesecake layer, a white confetti cheesecake layer, and a glossy pink topping. Each slice is finished with whipped cream, rainbow sprinkles, and a pink heart cookie for a bakery-style birthday look.

  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cups heavy whipping cream, cold
  • Pink gel food coloring
  • 1/4 cup rainbow sprinkles, divided
  • 3/4 cup white chocolate chips
  • 1/4 cup heavy cream
  • Whipped cream
  • Extra rainbow sprinkles
  • 1 pink heart cookie

Instructions

  1. Mix the graham cracker crumbs, melted butter, and sugar until evenly combined. Press firmly into the bottom of a springform pan or deep pie dish. Chill for 20 minutes.
  2. Beat the cream cheese, powdered sugar, and vanilla until smooth. Scrape the bowl well so no lumps remain.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold it gently into the cream cheese mixture.
  4. Divide the filling into 2 bowls. Tint one bowl pink and leave the other white. Fold rainbow sprinkles into both mixtures.
  5. Spread the pink confetti cheesecake layer over the crust. Add the white confetti cheesecake layer on top. Smooth the surface and chill for at least 4 hours, or until firm.
  6. Heat the heavy cream until warm, then pour it over the white chocolate chips. Let stand for 1 minute, then stir until smooth. Tint pink with gel food coloring. Cool until slightly thickened but still pourable.
  7. Pour the pink glaze over the chilled cheesecake. Spread gently for a smooth glossy finish. Add a few sprinkles on top.
  8. Refrigerate for 30 to 45 minutes until the topping is set.
  9. Cut into slices with a warm clean knife. Add a whipped cream rosette, extra sprinkles, and a pink heart cookie on top.
