  • 1 cup Peach Nectar or Juice (for dipping ladyfingers)
  • Ladyfingers (amount as needed to cover the dish)
  • Reserved peach slices for garnish
  • Crushed graham crackers or cookies for garnish

Instructions

  1. Start by washing and slicing 3-4 ripe peaches. Set aside a few slices for garnish, and place the rest in a bowl. Add 2 tablespoons of peach nectar and toss to coat the peach slices evenly. Let them sit for about 10 minutes to soften.
  2. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Add 1 teaspoon of vanilla extract and 2 tablespoons of powdered sugar. Using an electric mixer, whip the mixture until soft peaks form, ensuring it’s light and fluffy.
  3. In a shallow dish, pour about 1 cup of peach nectar or juice. Quickly dip each ladyfinger into the nectar, ensuring they’re wet but not soggy. Lay them in a single layer in a rectangular serving dish, covering the bottom completely.
  4. Spread half of the creamy mascarpone mixture over the layer of ladyfingers. Then, add half of the peach slices on top. Repeat this process with another layer of dipped ladyfingers, followed by the remaining cream and then the rest of the peach slices.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if you have the time. This allows the flavors to meld beautifully.
  6. Before serving, whip a little extra cream to soft peaks and use it to pipe decorative dollops on top. Garnish with the reserved peach slices and a sprinkle of crushed graham crackers or cookies for added texture.
