  • 2 cups beef broth
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 large green bell pepper, finely chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, bring beef broth to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In the same pot over medium heat, add ground beef along with salt and pepper. Cook until browned, breaking apart as it cooks. Drain excess grease if needed.
  3. Stir in chopped onion and bell pepper; cook for 3-5 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  4. Mix in black beans, diced tomatoes, corn, taco seasoning, and cooked pasta. Stir well to combine.
  5. Let mixture simmer for about 5 minutes to meld flavors.
  6. Stir in shredded cheddar cheese until melted and creamy. Serve hot.
