One Pot Taco Beef Pasta is a quick weeknight meal that combines the flavors of tacos with pasta for a satisfying dish.

- 8 ounces rotini pasta
- 2 cups beef broth
- 1 pound ground beef
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 onion, finely chopped
- 2 teaspoons minced garlic
- 1 large green bell pepper, finely chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes, undrained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, bring beef broth to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- In the same pot over medium heat, add ground beef along with salt and pepper. Cook until browned, breaking apart as it cooks. Drain excess grease if needed.
- Stir in chopped onion and bell pepper; cook for 3-5 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
- Mix in black beans, diced tomatoes, corn, taco seasoning, and cooked pasta. Stir well to combine.
- Let mixture simmer for about 5 minutes to meld flavors.
- Stir in shredded cheddar cheese until melted and creamy. Serve hot.
