Easy One Pot Queso Chicken and Rice Recipe for Quick Meals
Ingredients
- Chicken Breasts or Thighs
- Long-grain white rice
- Queso Cheese
- Bell peppers
- Onions
- Corn
- Black beans
- Chicken Broth
- Vegetable Broth (optional)
- Chili powder
- Cumin
- Garlic powder
- Salt
- Pepper
- Cayenne pepper (optional)
Instructions
- Prepare the Ingredients: Start by dicing your chicken into bite-sized pieces. Chop the bell peppers and onion to your desired size.
- Sauté the Chicken: In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the diced chicken and cook until browned on all sides. This should take about 5-7 minutes.
- Add the Vegetables: Toss in the onions and bell peppers, cooking until they soften, about 3-4 minutes.
- Season: Stir in the chili powder, cumin, garlic powder, salt, and pepper, ensuring everything is well-coated with the spices.
- Add Rice and Broth: Pour in the rice and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Cook: Cover the pot and reduce the heat to low. Let it cook for about 18-20 minutes, or until the rice is tender and has absorbed the liquid.
- Stir in the Queso: Once the rice is done, remove the pot from heat and stir in the queso cheese until it’s melted and creamy.
- Serve: Garnish with chopped cilantro or green onions if desired, and enjoy your one-pot wonder!
