This One Pot Creamy Tomato Orzo is cozy, flavorful, and comes together in just 25 minutes.

- 1 cup orzo pasta
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tablespoons tomato paste
- 3 cloves garlic, minced
- ½ medium onion, finely diced
- 2 tablespoons olive oil
- 3 cups vegetable broth
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- ¼ cup grated Parmesan cheese (optional)
- Fresh basil, for garnish (optional)
Instructions
- Heat olive oil in a large pot or skillet over medium heat.
- Sauté onion for 3–4 minutes until softened, then stir in garlic and cook for 1 more minute.
- Add orzo and toast for 1–2 minutes. Stir in tomato paste and mix well.
- Pour in vegetable broth, chickpeas, Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine.
- Simmer uncovered for 10–12 minutes, stirring often, until orzo is tender and most liquid is absorbed.
- Stir in baby spinach until wilted. Add Parmesan and basil if desired. Adjust seasoning.
- Scoop into bowls and garnish with extra cheese or herbs. Serve hot.
