Ingredients

  • 1 cup orzo pasta
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons tomato paste
  • 3 cloves garlic, minced
  • ½ medium onion, finely diced
  • 2 tablespoons olive oil
  • 3 cups vegetable broth
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh basil, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or skillet over medium heat.
  2. Sauté onion for 3–4 minutes until softened, then stir in garlic and cook for 1 more minute.
  3. Add orzo and toast for 1–2 minutes. Stir in tomato paste and mix well.
  4. Pour in vegetable broth, chickpeas, Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine.
  5. Simmer uncovered for 10–12 minutes, stirring often, until orzo is tender and most liquid is absorbed.
  6. Stir in baby spinach until wilted. Add Parmesan and basil if desired. Adjust seasoning.
  7. Scoop into bowls and garnish with extra cheese or herbs. Serve hot.
