Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes, plus more for garnish
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1 tablespoon tomato paste
  • 1/3 cup finely grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a medium bowl, whisk together 1 cup all-purpose flour, baking powder, 1/4 teaspoon salt, and garlic powder for the dumplings.
  2. Stir in the milk and melted butter just until a soft dough forms. Set aside.
  3. Heat a large deep skillet over medium heat and add the olive oil.
  4. Season the chicken with 1/2 teaspoon salt and black pepper, then add it to the skillet. Cook for 5 to 6 minutes, stirring occasionally, until lightly golden.
  5. Add the diced onion and cook for 3 minutes until softened. Stir in the garlic, smoked paprika, red pepper flakes, and tomato paste.
  6. Sprinkle in 1 tablespoon all-purpose flour and stir for 30 seconds.
  7. Pour in the chicken broth and heavy cream, scraping the bottom of the pan. Stir in the parmesan cheese and bring to a gentle simmer.
  8. Drop heaping spoonfuls of dumpling dough evenly over the sauce.
  9. Cover the skillet, reduce heat to medium-low, and cook for 12 to 15 minutes until the dumplings are puffed and cooked through.
  10. Remove the lid, sprinkle with chopped parsley and extra red pepper flakes if desired, then rest for 2 minutes before serving.
