Ingredients

  • 1 tbsp white miso paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp honey
  • Pinch red pepper flakes
  • 2 tbsp warm water
  • 1 tbsp salted butter
  • 1 tbsp extra virgin olive oil
  • 3 cups sliced mushrooms of choice
  • 2 zucchini (cut into half moons)

Instructions

  1. In a small bowl whisk together the miso, garlic powder, onion powder, honey, a pinch of red pepper flakes, and the water until smooth. Set aside.
  2. Heat a large skillet over medium heat. Once hot, add the butter and olive oil.
  3. Add the mushrooms and saute for about 3-5 minutes, then add the zucchini and saute for another 5 minutes.
  4. Add the miso mixture to the vegetables and stir until everything is coated and continue to saute for another 5 minutes or until the vegetables are tender but not soggy.
  5. Serve with more red pepper flakes on top and enjoy!
