Ingredients

  • Fresh wild-caught salmon
  • Mixed greens (arugula, spinach, romaine)
  • English cucumbers
  • Cherry tomatoes
  • Red onion
  • Feta cheese
  • Kalamata olives
  • Olive oil
  • Lemon juice
  • Dried oregano
  • Salt
  • Pepper
  • Minced garlic

Instructions

  1. Start by marinating the salmon fillets. In a bowl, mix 2 tablespoons of olive oil, the juice of one lemon, minced garlic, dried oregano, salt, and pepper. Coat the salmon with this marinade and let it sit for at least 30 minutes.
  2. Heat your grill to medium-high. Ensure it’s well-oiled to prevent sticking.
  3. Place the marinated salmon on the grill, skin-side down. Grill for about 5-6 minutes per side, depending on thickness, until the salmon flakes easily with a fork. Remove from heat and let it rest.
  4. While the salmon is grilling, wash and dry your mixed greens. In a large bowl, combine the greens, sliced cucumbers, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and olives.
  5. In a small bowl, whisk together 3 tablespoons of olive oil, the juice of half a lemon, a teaspoon of dried oregano, and a pinch of salt and pepper. Adjust seasoning to taste.
  6. Once the salmon has rested, flake it into large pieces. Add the salmon on top of the salad mix and drizzle with the dressing. Toss gently to combine.
