Mango Chickpea Salad is a refreshing and healthy salad made with sweet mango, protein-rich chickpeas, crisp vegetables, fresh herbs, and a zesty lime dressing.
Ingredients

- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 ripe mangoes, diced
- 1 medium cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/3 cup cilantro or parsley, chopped
- 1 avocado, diced (optional)
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon maple syrup or honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional chili flakes or jalapeño
Instructions
- Drain and rinse chickpeas thoroughly, then pat dry.
- Dice mango, cucumber, bell pepper, onion, herbs, and avocado if using.
- In a small bowl whisk together lime juice, olive oil, maple syrup, salt, pepper, and optional chili.
- Add chickpeas, mango, cucumber, pepper, onion, and herbs to a large bowl.
- Pour dressing over salad and toss gently until evenly coated.
- Chill for 20 minutes or serve immediately.
- Add avocado before serving if using.
