  • 1 avocado, diced (optional)
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional chili flakes or jalapeño

Instructions

  1. Drain and rinse chickpeas thoroughly, then pat dry.
  2. Dice mango, cucumber, bell pepper, onion, herbs, and avocado if using.
  3. In a small bowl whisk together lime juice, olive oil, maple syrup, salt, pepper, and optional chili.
  4. Add chickpeas, mango, cucumber, pepper, onion, and herbs to a large bowl.
  5. Pour dressing over salad and toss gently until evenly coated.
  6. Chill for 20 minutes or serve immediately.
  7. Add avocado before serving if using.
