Ingredients
- Boneless, skinless chicken thighs
- Fresh ripe mango
- Jasmine rice
- Bell peppers
- Red onions
- Avocado (optional)
- Soy sauce
- Honey
- Lime juice
- Salt
- Oil
- Sesame seeds (optional)
- Fresh cilantro (optional)
Instructions
- Prepare the rice: Start by cooking your rice according to package instructions. This usually involves rinsing the rice and boiling it in water. Set it aside when done.
- Marinate the chicken: In a bowl, combine soy sauce, honey, lime juice, and a pinch of salt. Add your chicken pieces and let them marinate for at least 15-30 minutes. The longer, the better!
- Cook the chicken: Heat a skillet over medium-high heat and add a splash of oil. Once hot, add the marinated chicken. Cook for about 6-8 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest for a few minutes before slicing.

- Assemble the bowls: Start with a base of rice in your serving bowls. Top with sliced chicken, sautéed vegetables, and fresh mango. If using, add avocado slices on top.
- Garnish and serve: Finish with a sprinkle of sesame seeds or fresh cilantro if desired. Serve immediately and enjoy!
