Description

A not-too-sweet and extra chocolatey black forest cake with light and soft chocolate sponge cake, cherries, Chantilly whipped cream and chocolate ganache.


Ingredients

  • 8 large eggs, room temperature
  • 1 cup granulated sugar (200g)
  • 1 cup all purpose flour (130g)
  • 1/2 cup cocoa powder (50g)
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 14 oz cans or jars of pitted cherries in syrup
  • 3 cups of heavy whipping cream, chilled (720g)
  • 1/4 cup sugar (50g)
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 240g semi sweet chocolate
  • 1 cup heavy cream (240g)

Instructions

  1. Pre-heat oven to 350F and prepare 4 8″ round cake pans by placing parchment paper on the bottom.
  2. Add the eggs and sugar to the bowl of your stand mixer and whisk on medium high speed for 5-7 minutes until the mixture is pale, thick and fluffy.
  3. Sift in the flour, cocoa powder, baking powder and salt.
  4. Gently fold the dry ingredients into the wet until no streaks of flour remain.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 10-12 minutes, or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 20 minutes, then cool fully outside.
  8. Drain the cherries and reserve the juice in a saucepan.
  9. Save a handful of cherries for decoration and chop the rest roughly.
  10. Cool the cherry juice for 3-5 minutes, then let it cool fully.
  11. Add the cold heavy cream, sugar, salt and vanilla to a bowl. Whisk until medium peaks form.
  12. Melt the chocolate and cream in a microwave-safe bowl in 20-second increments until smooth.
  13. Assemble the cake by layering with cherry syrup, whipped cream, chopped cherries, and ganache.
  14. Repeat with the next layers and frost with whipped cream.
  15. Chill the cake for 15 minutes.
  16. Warm the ganache and pour it over the cake, letting it drip down the sides.
  17. Pipe dollops of whipped cream around the edge and top with reserved cherries and chocolate shavings.
  18. Serve & enjoy!

Notes

  • You can use any type of cherries you prefer.
  • Make sure the eggs are at room temperature for the best results.
  • Do not over bake the cake layers.
