- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 6 ounces feta cheese
- 1/3 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic
Instructions
- Cook orzo in salted boiling water according to package instructions (8–10 minutes). Drain and set aside.
- In a bowl, mix olive oil, lemon juice, lemon zest, Dijon mustard, garlic, oregano, salt, and black pepper. Coat the chicken thoroughly.
- Heat a skillet over medium heat and cook chicken for 5–6 minutes per side until fully cooked. Let rest, then slice.
- In the same pan, sauté cherry tomatoes for 2–3 minutes, then add spinach and cook until wilted.
- In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and garlic. Blend until smooth and creamy.
- Assemble bowls with orzo, sautéed vegetables, and sliced chicken. Top with a generous spoonful of garlic whipped feta and serve.
