Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake for 8–10 minutes, then let cool.
  5. Beat cream cheese and sugar until smooth.
  6. Add eggs one at a time, mixing gently.
  7. Mix in sour cream, lemon juice, zest, and vanilla.
  8. Pour filling over the crust.
  9. Bake for 45–50 minutes until the center is slightly set.
  10. Let cool, then refrigerate for at least 4 hours.
