Irresistible Irish Bacon Potato Skillet for a Cozy Dinner

- 4 medium Yukon Gold or Red Potatoes (Diced into 1/2-inch cubes)
- 8 oz Thick-Cut Irish Bacon
- 1 large Yellow Onion (Sliced)
- 2 tbsp Fresh Parsley (For garnish)
- 2 tbsp Butter or Olive Oil
- 1 tsp Sea Salt (Adjust as needed)
- 1/2 tsp Freshly Cracked Black Pepper
- 1 tsp Garlic Powder (Can substitute with minced fresh garlic)
- 1 tsp Smoked Paprika (Optional)
Instructions
- Scrub and dice the potatoes into 1/2-inch cubes.
- Heat a large skillet over medium heat. Add the chopped bacon and cook until golden and crispy, about 6-8 minutes.
- Push the bacon to one side of the skillet, then add the sliced onions with a pinch of salt. Sauté until softened, about 2-3 minutes.
- Stir in the diced potatoes along with salt, pepper, and optional garlic powder and smoked paprika.
- Spread the mixture in an even layer and cook undisturbed for 4-5 minutes.
- Flip the potatoes and continue cooking, stirring every 3-4 minutes until fork-tender and crispy, about 10-15 minutes.
- For extra crunch, add remaining butter and broil for 2-3 minutes.
- Garnish with fresh parsley, adjust seasoning to taste, and serve hot.
