  • 1/2 tsp Freshly Cracked Black Pepper
  • 1 tsp Garlic Powder (Can substitute with minced fresh garlic)
  • 1 tsp Smoked Paprika (Optional)

Instructions

  1. Scrub and dice the potatoes into 1/2-inch cubes.
  2. Heat a large skillet over medium heat. Add the chopped bacon and cook until golden and crispy, about 6-8 minutes.
  3. Push the bacon to one side of the skillet, then add the sliced onions with a pinch of salt. Sauté until softened, about 2-3 minutes.
  4. Stir in the diced potatoes along with salt, pepper, and optional garlic powder and smoked paprika.
  5. Spread the mixture in an even layer and cook undisturbed for 4-5 minutes.
  6. Flip the potatoes and continue cooking, stirring every 3-4 minutes until fork-tender and crispy, about 10-15 minutes.
  7. For extra crunch, add remaining butter and broil for 2-3 minutes.
  8. Garnish with fresh parsley, adjust seasoning to taste, and serve hot.
