Description
This easy tahini-free hummus is smooth, creamy, and ready in minutes. It’s a simple homemade dip that’s perfect for snacks, meals, and more.
Ingredients
Scale
- 15 oz chickpeas (drained and rinsed or 1 ½ cups cooked chickpeas)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp water
- 1 tbsp fresh garlic (minced)
- 1 tsp sea salt
Instructions
- Add the chickpeas, lemon juice, garlic, salt, and 1 tbsp of the water to the bowl of a food processor and blend on high.
- Scrape sides of the bowl and check for consistency; it should not be completely smooth, but the texture should be slightly creamy.
- Turn the food processor to high and, while it is running, slowly add the olive oil for a creamy finish.
- If needed, add the remaining tablespoon of water (or substitute some of the starchy juice from the can) until the desired consistency is reached. It takes a little longer than you might think to become creamy.
