Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1 ripe mango, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cucumber

Instructions

  1. Rinse quinoa under cold water thoroughly.
  2. Add quinoa and water or broth to a saucepan and bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until fluffy.
  4. In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic powder, paprika, salt, and pepper.
  5. Coat chicken breasts with half the marinade and let sit for 10 minutes.
  6. Heat a grill pan or skillet over medium-high heat.
  7. Cook chicken for 5–6 minutes per side until fully cooked.
  8. Let chicken rest before slicing.
  9. Grill mango slices for 1–2 minutes per side until lightly charred.
  10. Dice grilled mango into chunks.
  11. Fluff quinoa and mix with cilantro, red bell pepper, and cucumber.
  12. Stack quinoa in a bowl or plate using a mold.
  13. Top with sliced chicken and grilled mango.
  14. Drizzle remaining honey lime sauce on top and serve immediately.
