- 2 boneless, skinless chicken breasts
- 1 cup quinoa
- 2 cups water or chicken broth
- 1 ripe mango, sliced
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1/4 cup diced red bell pepper
- 1/4 cup diced cucumber
Instructions
- Rinse quinoa under cold water thoroughly.
- Add quinoa and water or broth to a saucepan and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes until fluffy.
- In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic powder, paprika, salt, and pepper.
- Coat chicken breasts with half the marinade and let sit for 10 minutes.
- Heat a grill pan or skillet over medium-high heat.
- Cook chicken for 5–6 minutes per side until fully cooked.
- Let chicken rest before slicing.
- Grill mango slices for 1–2 minutes per side until lightly charred.
- Dice grilled mango into chunks.
- Fluff quinoa and mix with cilantro, red bell pepper, and cucumber.
- Stack quinoa in a bowl or plate using a mold.
- Top with sliced chicken and grilled mango.
- Drizzle remaining honey lime sauce on top and serve immediately.
