Ingredients
- Boneless, skinless chicken breasts
- Honey
- BBQ Sauce
- Baby potatoes
- Olive oil
- Salt
- Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes, then toss them in a bowl with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet lined with parchment paper.
- In a separate bowl, combine the chicken breasts with honey and BBQ sauce. Make sure each piece is well coated.
- Nestle the seasoned chicken breasts among the potatoes on the baking sheet.
- Place the baking sheet in the preheated oven and bake for about 25-30 minutes. Check for doneness; the chicken should reach an internal temperature of 165°F (75°C).
- For a delicious caramelized finish, switch your oven to broil for the last 3-5 minutes. Keep a close eye on it to avoid burning!
- Once done, let the chicken rest for a few minutes before slicing. Serve it alongside the roasted potatoes, drizzling any remaining sauce over the top.
