These High Protein Kodiak Cake Muffins are a quick breakfast, easy snack, and smart meal prep recipe all in one.

- 2 cups Kodiak Cakes Chocolate Power Cakes mix
- 2 large eggs
- 3/4 cup milk
- 1/2 cup plain Greek yogurt
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup mini chocolate chips
- 1 tablespoon mini chocolate chips for topping
Instructions
- Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners or lightly grease the pan.
- In a large mixing bowl, whisk together the eggs, milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
- Add the Kodiak Cakes Chocolate Power Cakes mix, baking powder, and salt, then stir just until combined.
- Fold in the 1/3 cup mini chocolate chips, keeping the batter evenly mixed without overworking it.
- Divide the batter evenly between the muffin cups, filling each about three-quarters full.
- Sprinkle the remaining 1 tablespoon mini chocolate chips over the tops of the muffins.
- Bake for 14 to 18 minutes, or until the tops spring back lightly and a toothpick inserted near the center comes out with a few moist crumbs.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
