Description

Guinness Chocolate Cake is a moist, fudgy, and rich dessert. The Baileys frosting adds a decadent touch.


Ingredients

  • 2 cups all-purpose flour (250 grams)
  • ¾ cup natural unsweetened cocoa powder (65 grams)
  • 2 teaspoons baking soda
  • 1 teaspoon instant espresso powder or instant coffee (optional)
  • 1 teaspoon salt
  • 1 cup granulated sugar (200 grams)
  • 1 cup packed light brown sugar (200 grams)
  • ½ cup canola or vegetable oil (120 ml)
  • ½ cup buttermilk (120 ml)
  • ½ cup full-fat sour cream (120 grams)
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup Guinness beer (240 ml)
  • 1 ½ cups unsalted butter (340 grams)
  • 4 ½ cups powdered sugar (540 grams)
  • 4 to 5 tablespoons Baileys Irish cream
  • 1 ½ teaspoons pure vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C). Spray two 9-inch round cake pans with nonstick spray and line with parchment paper.
  2. Sift flour, cocoa powder, baking soda, espresso powder, and salt together in a bowl. Whisk in granulated sugar and brown sugar.
  3. Add oil, buttermilk, sour cream, eggs, and vanilla extract. Mix until combined. Add Guinness beer and mix until just combined.
  4. Distribute batter evenly between the cake pans.
  5. Bake for 25 to 30 minutes or until a toothpick comes out clean.
  6. Cool in pans for 20 to 30 minutes. Remove cakes and cool completely on a wire rack.
  7. Wrap cooled layers in plastic wrap and refrigerate until ready to use.
  8. For frosting, beat butter in a mixer until smooth. Gradually mix in powdered sugar on low speed.
  9. Add Irish cream, vanilla extract, and salt. Mix until fully combined.
  10. Level the tops of each cake layer. Place the first layer on a serving surface and add 1 cup of frosting.
  11. Place the second layer upside down on top of the first. Frost the top and sides of the cake with a thin layer to catch crumbs.
  12. Refrigerate until crumb coat is firm. Frost the cake with remaining frosting.
  13. Pipe decorations if desired. Slice and serve or store in an airtight container.

  • Use extra stout or non-alcoholic Guinness.
  • Chill layers for easier frosting.
