Description
Ground Turkey Black Bean Enchiladas are a delicious and healthy twist on a classic Mexican dish. Made with lean ground turkey, fiber-rich black beans, and tangy enchilada sauce, these enchiladas are perfect for a quick and satisfying weeknight meal.

- 1 Tbsp olive oil
- 1 yellow onion, diced (1 small or 1/2 large)
- 3 cloves garlic, minced
- 1 jalapeño, seeded and diced
- Salt and pepper, to taste
- 1 lb ground turkey
- 3 Tbsp enchilada seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes
- 1 (28 oz) can red enchilada sauce
- 1–2 cups shredded cheddar cheese
- 8–10 8-inch flour tortillas
Instructions
- Preheat the oven to 400°F (200°C).
- In a large sauté pan, heat olive oil over medium heat. Add the diced onion, garlic, and jalapeño, and cook for 5 minutes until softened.
- Add the ground turkey to the pan and cook until no longer pink. Stir in the enchilada seasoning, diced tomatoes, and black beans. Cook for a couple of minutes to combine the flavors.
- Pour 1 cup of enchilada sauce into a 9×13-inch baking dish.
- Scoop the turkey and bean mixture into the tortillas (about ½ cup per tortilla) and roll them up. Place them seam-side down in the prepared baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving.
- Top with your favorite garnishes like sour cream, avocado, and cilantro.
