- 1 pound ground beef
- 1 can diced green chilies
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded Monterey Jack cheese
- Corn tortillas
- Vegetable oil or canola oil for frying
- Olive oil for baking
Instructions
- In a large skillet over medium heat, brown 1 pound of ground beef until fully cooked. Drain excess fat if necessary.
- Stir in 1 can of diced green chilies, 1 teaspoon of cumin, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Mix well and let it simmer for about 2-3 minutes to meld the flavors.
- Remove the skillet from heat and stir in 1 cup of shredded Monterey Jack cheese until melted and combined.
- In a separate pan, lightly warm the corn tortillas on low heat for about 30 seconds on each side.
- Place a couple of tablespoons of the beef mixture in the center of each tortilla. Roll tightly, securing the filling inside.
- For frying, heat about 1 inch of oil in a large skillet over medium-high heat. Fry the taquitos in batches for 2-3 minutes on each side or until golden brown and crispy. If baking, preheat your oven to 400°F (200°C), place the taquitos on a baking sheet, brush with olive oil, and bake for 15-20 minutes or until crisp.
- Once cooked, remove the taquitos from the oil or oven and let them cool for a minute. Serve with your favorite dipping sauces like salsa, guacamole, or sour cream.
