Description

Fresh Green Bean Casserole made with creamy mushrooms and crispy onions. Easy, flavorful, and includes a dairy-free option. Perfect holiday side dish!


Ingredients

  • 3 tablespoons avocado oil (or butter)
  • 1 medium onion (finely diced)
  • 1 lb bella mushrooms (thinly sliced)
  • 1 cup heavy cream (or coconut cream)
  • 23 cloves garlic (minced)
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • sea salt and pepper (to taste)
  • 1 tablespoon parsley (finely chopped)
  • 1 lb green beans (fresh, trimmed)
  • 3/4 cup milk (or coconut milk)
  • 1/2 cup crispy fried onions (store bought)
  • avocado oil spray (for greasing the baking dish, or butter)
  • 3/4 cup crispy fried onions

Instructions

  1. Heat butter or avocado oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the sliced mushrooms and increase heat to medium-high. Cook, stirring often, until mushrooms release and reabsorb their juices, about 5 minutes.
  4. Stir in cream or coconut cream, garlic, thyme, salt, and pepper.
  5. Reduce heat to medium and simmer until slightly thickened, about 3–4 minutes.
  6. Stir in chopped parsley and remove from heat.
  7. Preheat oven to 350°F (175°C). Grease a 13×9-inch baking dish with avocado oil spray.
  8. Place trimmed green beans in the prepared dish.
  9. In a medium bowl, combine the creamed mushrooms, milk (or coconut milk), ½ cup crispy onions, and salt and pepper.
  10. Pour the mixture evenly over the green beans and toss gently to coat.
  11. Bake uncovered for 30 minutes, until green beans are tender.
  12. Remove from oven, sprinkle 3/4 cup additional crispy onions over the top, and bake for another 5–10 minutes, until golden and crispy.
  13. Serve warm as a side dish for holiday meals or weeknight dinners. Enjoy the creamy mushrooms and perfectly crisp onions with every bite!
