- 1 lb chicken breast (diced)
- 4 cups chicken broth
- 2 cups noodles (preferably egg noodles)
- 1 tbsp ginger (minced)
- 1 tbsp garlic (minced)
- 1 cup carrots (sliced)
- 1 cup celery (sliced)
- 2 tbsp soy sauce
- 1 tbsp olive oil

Instructions
- Heat olive oil in a soup pot over medium heat.
- Add minced ginger and garlic, sauté until fragrant.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and bring to a boil.
- Add sliced carrots and celery, simmer for 10 minutes.
- Add noodles and cook according to package instructions.
- Stir in soy sauce, season with salt and pepper to taste.
- Serve hot.
