- Optional: 2 tbsp chopped fresh mint or basil
Instructions
- Wash and dry the strawberries and cucumber. Hull the strawberries and slice them; thinly slice the cucumbers into rounds.
- In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning to taste.
- In a large mixing bowl, combine cucumbers, strawberries, chopped herbs, and cheese (if using).
- Drizzle half of the dressing over the salad mixture and gently toss to coat.
- Transfer to a serving platter and garnish with any remaining dressing before serving.
