  • 2 pounds boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup parmesan cheese, freshly grated
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • Fresh basil or parsley for garnish
  • Optional red pepper flakes

Instructions

  1. Lightly grease the crock pot insert.
  2. Arrange chicken breasts in the bottom.
  3. In a bowl combine broth, cream, cream cheese, parmesan, garlic, sun-dried tomatoes, butter, Italian seasoning, paprika, salt, and pepper.
  4. Pour mixture over chicken evenly.
  5. Cook on low for 4 to 6 hours or high for 2 to 3 hours until chicken is cooked through.
  6. Stir sauce until smooth and creamy.
  7. Slice or shred chicken if desired.
  8. Garnish with fresh herbs and serve hot.
