  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Olive oil for frying
  • 1 cup mozzarella cheese, sliced or shredded
  • Fresh basil leaves
  • 2 cups fresh basil leaves (for pesto)
  • 1/3 cup olive oil (for pesto)
  • 1/4 cup grated Parmesan cheese (for pesto)
  • 2 garlic cloves (for pesto)
  • 2 tablespoons pine nuts or walnuts (for pesto)
  • Salt and pepper to taste (for pesto)

Instructions

  1. Season the chicken with salt, pepper, garlic powder, and paprika. Coat each piece in flour, then dip into beaten eggs, and finally coat with a mixture of breadcrumbs and Parmesan cheese.
  2. Heat olive oil in a skillet over medium heat. Fry the chicken for about 4-5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
  3. In a blender or food processor, combine basil leaves, olive oil, Parmesan cheese, garlic, and nuts. Blend until smooth. Season with salt and pepper.
  4. Place the fried chicken in a baking dish, top each piece with mozzarella cheese, and bake at 180°C (350°F) for 8-10 minutes until melted and bubbly.
