- 4 chicken breasts, flattened
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- Olive oil for frying
- 1 cup mozzarella cheese, sliced or shredded
- Fresh basil leaves
- 2 cups fresh basil leaves (for pesto)
- 1/3 cup olive oil (for pesto)
- 1/4 cup grated Parmesan cheese (for pesto)
- 2 garlic cloves (for pesto)
- 2 tablespoons pine nuts or walnuts (for pesto)
- Salt and pepper to taste (for pesto)
Instructions
- Season the chicken with salt, pepper, garlic powder, and paprika. Coat each piece in flour, then dip into beaten eggs, and finally coat with a mixture of breadcrumbs and Parmesan cheese.
- Heat olive oil in a skillet over medium heat. Fry the chicken for about 4-5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
- In a blender or food processor, combine basil leaves, olive oil, Parmesan cheese, garlic, and nuts. Blend until smooth. Season with salt and pepper.
- Place the fried chicken in a baking dish, top each piece with mozzarella cheese, and bake at 180°C (350°F) for 8-10 minutes until melted and bubbly.
- Spoon generous amounts of pesto over the cheesy chicken and garnish with fresh basil leaves. Serve hot for maximum flavor.
